+ Runner-up pairing: .. I was about to type ItaSasu and realized SasuSaku was starting to gain. But it's weird, I like the IDEA of SasuSaku but I have zero interest in reading fic about them. *puzzled*
+ Honorable mention(s): My interest in SasuNeji has alas pretty much died. SasuSai, then. (man, you weren't far off with that list. XD)
+ Crack pairing(s): gnnnn no threesome no i cannot list sasusuikarin or sasusakukarin nooo. DX Uh. Uhhh. Oh hell, KyuuSasu. (in human shape oh god DX huge fox = nooooo)
+ Ship everyone else seems to like, but I don't: Uh, what are the other popular sasuke ships? I have no idea. @__@ Sasuke is my fandom bicycle anyway.

For the SasuSaku thing, I know what you're saying-- people seem to write it so shallowly, like "Oh Sasuke suddenly realizes he omglurvs Sakura and then Sakura goes "no I don't like you anymore" and omgangst. That's the plot for half the SasuSaku fics out there. But I've read some awesomesauce fics which keep me interested :D

...ngh sasusakukarin...WOAH. I never even thought of that before but omg it's like hatesmex except like...not. this time it would be Sakura and Karin fighting instead of Naruto and Sasuke! That's pretty amazing.

Also I had the misfortune to land on fic that Sue'd Sakura and made sasuke into a kinda suave seme-type, too. Which doesn't fit much with my vision of them much. Besides Canon proved Sakura alone wasn't enough to break through to him, and I don't like how in so many sasusaku fics Naruto is about as relevant as a pet rock. I would love a Team fic where Sasuke and Sakura had the romantic relationship but Naruto was still a close, important friend. But... urgh.
